Overview

Ultimo S 2020 is the flagship Shiraz from Vinarija Trivanović, grown on the Principovac vineyard – the winery's best location on Fruška Gora. After 20 months of maturation in 225-L barriques, this wine achieved 93 points from Sommelier Dušan Vranić (Vino&Fino). Stylistically oriented towards the great Syrahs of the Northern Rhône.

In the Glass

Ruby red of medium intensity, clear and of elegant depth.

On the Nose

Very appealing aromatics: cherry, pomegranate, and cranberry as leading fresh red fruit motifs, accompanied by black pepper, rose petals, and hibiscus. Subtle oak influence from barrique aging completes the profile with fine spice.

On the Palate

Medium-plus body, very round and elegant. Ripe cherry, pomegranate, and wild blueberry, earthy porcini mushroom notes, cloves, and Tellicherry pepper. The finish is long with well-integrated tannins – a Syrah profile of noble restraint and characteristic depth.

Food Pairing

Lamb chops with thyme and rosemary, roast duck with cherry or orange sauce, game dishes, porcini risotto, mature hard cheeses.

• Decanting time: 45 minutes
• Glass: Large red wine glass (Burgundy shape recommended)

Origin

Vinarija Trivanović in Šid, a third-generation family winery founded in 1959, cultivates 49 hectares on the western slopes of Fruška Gora. The Principovac vineyard is considered the best site of the estate and is exclusively reserved for Ultimo S.
